Chocolate Sorbet





Ingredients for 1 litre (1.2 quart) at 100% (Net quantity)

300g / 11oz dark chocolate
500ml / 16fl.oz water
60g / 2oz glucose (trimoline)
5g / 0.15oz orange peel (grated)


Preparation

1. Heat to boil the water, glucose and orange peel.
2. Add the chocolate to melt.
3. Place into a beaker and mix well.
4. Allow to cool.
5. Freeze at -8°F/-22°C for 24 hours before processing.
6. Pacotize twice for optimal texture / smoothness.
7. Recipe makes 10 portions, each approx. 3.5oz.
